Oatmeal Cookies

  • 3/4 cup dried fruit (cranberries, raisins or tart cherries)
  • 1 cup uncooked oatmeal
  • 1.5 full scoops of vanilla protein powder
  • 1 cup shredded coconut (optional)
  • 1/2 cup nuts (optional)
  • 2 egg whites
  • 1 tsp vanilla
  • 1 ripe banana
  • 1 tbsp honey (optional)
  • Non-stick cooking spray


Preheat oven to 350 degrees F. Mix dry ingredients separately from moist, then stir all ingredients together. Lightly coat a baking sheet with nonstick cooking spray and scoop rounded spoonfuls of dough onto it. Bake 20 minutes. Makes about 24 cookies.

Serves: 12

Note: Two of these cookies makes for a delicious and nutritious fat burning snack.

APPROXIMATE NUTRITIONAL ANALYSIS PER SERVING: 180 calories, 6.5 grams of protein, 25.6 grams of carbohydrates, 6 grams of fat, and 2.2 grams of dietary fiber.
