Watch out old-fashioned spaghetti and meatballs because there is a new recipe in town. It’s vegetarian friendly and packed with protein-rich beans, tomatoes, arugula and grated cheese this makes for one sensational Fat Loss Meal!
Ingredients:
- 8 oz whole wheat spaghetti
- 3 TBSP extra-virgin olive oil
- 2 TBSP minced fresh garlic
- ½ tsp crushed red pepper
- 2 cups grape tomatoes, halved
- 1 (16 oz) can Navy beans (white beans), rinsed and drained
- 6 oz arugula leaves
- 2 TBSP fresh lemon juice
- ½ cup grated Parmesan cheese (or ½ cup rice or soy cheese if desired)
Method:
Cook and drain pasta, saving ½ cup of water from cooked pasta. Place pasta in a small bowl, set aside, and keep warm.
Return pan to medium heat. Add oil, pepper and garlic. Cook 2 minutes or until garlic is lightly browned, stirring occasionally. Stir in tomatoes and beans and cook about 2 additional minutes. Add pasta and cook for 4 minutes, stirring frequently. Add reserved pasta water and arugula, tossing gently to combine. Remove from heat and stir in lemon juice and cheese. Serve immediately.
Serves: 5 (about 1 ½ cups)
